Moses Sleeper cheese is a bloomy-rind cheese developed at The Cellars at Jasper Hill in Greensboro, VT. Beneath a thin bloomy rind lies a gooey, milky core that shows a complex array of flavors: cauliflower, crème fraîche, and toasted nuts. The thin bloomy rind of this cheese is carefully cultivated in a vault at Jasper Hill dedicated to the proper rind development for this style of cheese. Moses Sleeper was a Revolutionary War-era scout who was shot on Vermont’s Northeast Kingdom’s legendary Bayley Hazen Military Road. The Cellars at Jasper Hill an innovative 22,000 square foot underground facility consisting of seven ageing caves received a U.S. Department of Agriculture (USDA) Rural Development (RD) Business and Industry Guaranteed (BIG) Loan. The loan was used to construct state-of-the-art artesian cheese aging cave facility to support expanded on-farm value-added cheese production as well as contract aging for other local cheese makers so they may access the growing market for artisan cheese nationwide on Sep. 19, 2013.
